Mezcal White Negroni Recipe - The Washington Post
This equal-parts cocktail swaps in a smoky mezcal for the gin, playing it off herbal, bittersweet gentian liqueur. Try different gentian liqueurs — with bright yellow Suze, the cocktail leans more earthy and grassy, emphasizing those notes in the mezcal. With other gentian liqueurs such as Salers, Don Ciccio’s Cinque or Luxardo Bitter Bianco, you’ll get different results, based on their varying botanicals.

Place a large ice cube in a rocks glass. Fill a mixing glass halfway with ice cubes. Add the mezcal, liqueur, and Cocchi and stir to combine and chill, about 10 seconds. Strain into the glass. Twist the zest to express the oils over the surface of the drink, then drop it into the drink and serve.
